Gingerbread with Lemon Sauce

Here is the recipe from small group at my house. Just in case you want to make it - it is very easy. Enjoy!

Gingerbread
2 1/3 c. flour
1/2 c. shortening
1/3 c. sugar
1 c. molasses
3/4 c. hot water
1 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
3/4 tsp. salt
1 large egg

Preheat oven to 325 degrees. Grease 9 inch square pan. Beat all ingredients together until smooth. Pour into pan. Bake 50 - 55 min.

Serve with Lemon Sauce and whipped cream if desired.
Serves 9

Lemon Sauce
1/2 c. sugar
2 tbsp. cornstarch
3/4 c. water
1 tbsp. grated lemon peel
1/4 c. lemon juice
2 tbsp. butter or stick margarine

Mix sugar and cornstarch in saucepan. Gradually stir in water. Over med. heat bring to a boil, stirring constantly until thickened. Boil and stir 1 min; remove from heat and stir in remaining ingredients. Serve warm or cool. Store covered in fridge up to 10 days.

yields 1 1/4 cups

NE Minneapolis Parade

These horses came right up to the sidewalk and all the kids got to pet their noses. This horse sneezed on Jared and Peter which made them laugh.
