Peanut-Ginger Marinade
Peanut-Ginger Marinade
(Makes about 1 1/2 cups)
Ingredients:1/2 cup hot water1/2 cup creamy peanut butter1/4 cup chili paste (can omit but it's really good!) 1/4 cup soy sauce2 Tablespoons vegetable oil or sesame oil2 Tablespoons white vinegar (rice vinegar works well)2 teaspoons grated ginger root1 teaspoon brown sugar4 cloves minced garlic (less to make it kid-friendly)1/4 teaspoon ground red pepper (less too make it kid-friendly)
Directions:1. In a medium bowl, gradually stir hot water into the peanut butter. Stir in chili paste, soy sauce, oil, vinegar, garlic, ginger, brown sugar and ground red pepper until mixed. It will be thick. If desired, add more water to thin it a bit. This is great for chicken on the grill. Just place chicken in marinade, coating evenly. Cover and refrigerate overnight. Make extra to use as a dipping sauce.

The shots before my battery died.
Now, Renee you got to play fair and let me take your picture! Atleast we captured your smiling face in the mirror :) Hi Wellsley, now you be careful with that - don't hit her too hard.
Okay Ali, this is for you:
What do you get when Ali has overdosed on Oreos and Christa's locked in a house with 5 children 5 and under all day?
